Our supplier uses Washington-grown Fuji apples that are sliced, frozen, and freeze dried (the freeze-drying involves sublimation of the fruit’s water content; that is, the frozen water content of the apples “vaporizes”, and never liquefies back into actual water). We’ve learned a couple of lessons from the freeze drying of Fuji apples. One, apples contain a lot of water – it takes 10 ounces of fresh apples to make enough Freeze Dried Fuji Apple Slices to fill a 1.2 ounce bag.
